Directions

Step 1

In a blender or food processor, combine the shredded coconut, melted coconut oil, honey, and vanilla extract. Blend until the mixture is well combined and sticky.

Step 2

Line a baking sheet with parchment paper.

Step 3

Scoop about 1 tablespoon of the coconut mixture and shape it into a small log or oval shape, placing it on the prepared baking sheet. Repeat with the remaining mixture to form 12 pieces.

Press an almond on top of each coconut log, pressing gently to adhere.

Place the tray in the freezer for about 15 minutes or until the coconut-mixture is firm.
