Ingredients

  • 4 medium zucchini
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves
  • 0.5 cup fresh basil leaves
  • 0.25 cup fresh parsley
  • 1 tablespoon fresh oregano
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon cracked black pepper
  • 1 cup cherry tomatoes
  • 0.25 cup pine nuts

Directions

Step 1

Using a spiralizer, create zucchini noodles from the medium zucchinis. Set them aside in a large bowl.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the pine nuts and toast them for about 2-3 minutes until golden and fragrant. Remove and set aside.

Step 3

In the same skillet, add the remaining olive oil and sliced garlic. Sauté for 1-2 minutes, or until the garlic is fragrant and lightly golden.

Step 4

Reduce the heat to low and add in the zucchini noodles, tossing to coat them in the garlic-infused oil. Cook for 3-4 minutes until the noodles are tender but still have a bite.

Step 5

While the noodles are cooking, chop the basil, parsley, and oregano. Add them to the skillet along with the lemon zest, lemon juice, sea salt, and black pepper. Toss everything together to combine.

Step 6

Halve the cherry tomatoes and add them to the skillet. Continue to cook for another 2 minutes until the tomatoes are warmed through.

Step 7

Remove the skillet from heat, stir in the toasted pine nuts, and serve immediately, garnished with additional fresh herbs if desired.
