Ingredients

  • 4 large russet potatoes
  • 1 cup coconut milk
  • 2 tablespoons ghee
  • 1 tablespoon fresh rosemary

  • 2 cloves garlic

Directions

Step 1

Peel and cut the russet potatoes into 2-inch chunks.

Put the potato chunks into a large pot and cover with cold water. Add a pinch of salt to the water.

Bring the water to a boil over medium-high heat. Once boiling, reduce to a simmer and cook until the potatoes are tender, about 15 minutes.
