  • 4 pounds bone-in lamb shoulder

  • 4 pieces garlic cloves
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon lemon zest

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Place the lamb shoulder on a clean work surface and allow it to come to room temperature for about 30 minutes.

Step 3

Prepare the herb crust by finely chopping the rosemary, thyme, and parsley. Mince the garlic cloves.

Step 4

In a small bowl, combine the chopped herbs, minced garlic, sea salt, black pepper, olive oil, and lemon zest to form a paste.
