Ingredients

  • 4 pieces fish fillets (such as cod, haddock, or salmon)
  • 1 cup almond flour
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup fresh dill, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 large egg
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a lightly greased baking rack.

Step 2

In a medium mixing bowl, combine the almond flour, chopped parsley, chopped dill, lemon zest, garlic powder, sea salt, and black pepper. Stir until well mixed.

Step 3

In a separate shallow dish, beat the egg until smooth.

Step 4

Pat the fish fillets dry with paper towels to remove any excess moisture.

Step 5

Dip each fish fillet into the beaten egg, ensuring it's fully coated, then press it into the herb and almond flour mixture to evenly coat both sides.

Step 6

Place the coated fish fillets onto the prepared baking sheet.

Step 7

Drizzle the olive oil evenly over the tops of the fish fillets to help with browning.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the fish is cooked through and the herbed crust is golden brown.

Step 9

Remove from the oven and let the fish fillets rest for a couple of minutes before serving.

Step 10

Serve warm with a wedge of lemon on the side for extra zest.
