  • 2 tablespoons Olive oil
  • 0.5 cup Fresh parsley, chopped
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 2 tablespoons Fresh oregano, chopped
  • 4 Garlic cloves, minced
  • 1 teaspoon Sea salt
  • 1 teaspoon Black pepper
  • 0.5 cup Almond flour

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the beef tenderloin dry with paper towels and place it on a clean cutting board.

Step 3

In a small bowl, mix together the chopped parsley, rosemary, thyme, oregano, minced garlic, sea salt, black pepper, and almond flour.

Step 4

Drizzle the olive oil over the beef tenderloin and rub it evenly across the surface.

Step 5

Press the herb mixture onto all sides of the beef, ensuring it adheres well to form a crust.

Step 6

Place the crusted beef onto a roasting pan or a baking dish.

Step 7

Bake in the preheated oven for about 40 to 45 minutes, or until the internal temperature of the beef reaches 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
