Ingredients

  • 1 large sweet potato
  • 2 medium carrot
  • 1 medium zucchini
  • 1 small onion
  • 2 cloves garlic
  • 0.5 cup almond flour
  • 0.25 cup coconut flour
  • 2 large eggs
  • 2 tablespoons coconut oil
  • 0.25 cup fresh parsley
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon oregano

Directions

Step 1

Peel and grate the sweet potato and carrots using a box grater or food processor. Place them in a large mixing bowl.

Step 2

Grate the zucchini and finely chop the onion. Mince the garlic cloves. Add these vegetables to the bowl with the sweet potato and carrots.

Step 3

In a separate small bowl, beat the eggs lightly. Set aside.

Add the almond flour, coconut flour, beaten eggs, chopped parsley, sea salt, black pepper, paprika, and oregano to the vegetable mixture.
