Ingredients

  • 2 tablespoons olive oil
  • 4 links pork sausages (Paleo-friendly)
  • 1 large, diced onion
  • 3 minced garlic cloves
  • 3 large, sliced carrots
  • 3 sliced celery stalks
  • 1 large, peeled and cubed sweet potato
  • 1 medium, sliced zucchini
  • 2 cups, chopped kale
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the sausages and cook until browned on all sides, about 6-8 minutes. Remove from the pot and set aside.

Step 3

In the same pot, add the onion and garlic, sauté until the onion is translucent, about 5 minutes.

Add the carrots, celery, and sweet potato to the pot. Cook for another 5 minutes, stirring occasionally.
