Ingredients

  • 2 pounds turkey breast, cubed
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium zucchini, sliced
  • 28 ounces diced tomatoes
  • 4 cups chicken broth
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat.

Step 2

Add the turkey cubes and brown them on all sides, about 5-7 minutes. Once browned, remove the turkey from the pot and set aside.

In the same pot, add the remaining 2 tablespoons of olive oil.

Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
