Begin by preparing your vegetables. Dice the onion, mince the garlic cloves, chop the carrots and celery, peel and cube the sweet potatoes, and slice the zucchini.
In a large pot, heat the coconut oil over medium heat. Add the Paleo-friendly sausage and cook until browned. Remove the sausage from the pot and set it aside.
In the same pot, add the chopped onion and garlic. Sauté them for about 3 minutes until the onion becomes translucent and fragrant.
Next, add the carrots and celery to the pot. Sauté for another 5 minutes to soften the vegetables slightly.
Return the sausage to the pot along with the cubed sweet potatoes, sliced zucchini, and can of diced tomatoes (including the juice). Stir everything together.
Pour in the chicken broth and add the bay leaves, dried thyme, salt, and black pepper. Bring the stew to a boil.
Once boiling, reduce the heat to a simmer and cover the pot. Allow the stew to cook for approximately 30 minutes, or until the sweet potatoes are tender.
Remove the bay leaves from the stew and discard them.
Check the seasoning and adjust with more salt and pepper if needed.
Serve the stew hot, garnished with freshly chopped parsley for an added burst of freshness.
