Ingredients

  • 1 pound ground pork sausage
  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 3 minced garlic cloves
  • 2 medium, diced bell peppers (red and yellow)
  • 3 medium, sliced carrots
  • 2 medium, sliced zucchini
  • 2 tablespoons tomato paste
  • 1 14-ounce can, diced canned tomatoes
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh basil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the ground pork sausage and cook until browned and cooked through, breaking it apart as it cooks, about 5-7 minutes. Remove sausage from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
