  • 2 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 medium, diced onion

  • 2 large, peeled and cubed sweet potatoes
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Add the beef stew meat and brown on all sides, for about 5-7 minutes. Do this in batches if necessary to avoid overcrowding the pot.

Remove the browned meat from the pot and set aside.
