Ingredients

  • 2 pounds Pork bones
  • 8 cups Water
  • 2 tablespoons Olive oil
  • 1 large Onion, roughly chopped
  • 4 cloves Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 2 stalks Celery stalks, sliced
  • 1 medium Turnip, peeled and cubed
  • 2 leaves Bay leaves
  • 4 sprigs Fresh thyme
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the pork bones and sear them until browned on all sides, about 5-7 minutes.

Step 2

Remove the bones and set aside. In the same pot, add the chopped onion and garlic. Sauté until the onions become translucent, about 5 minutes.

Step 3

Return the pork bones to the pot. Add 8 cups of water, making sure the bones are fully submerged.

Step 4

Bring the pot to a boil. Skim off any foam that rises to the top. Reduce the heat to low, cover, and let it simmer for about 1.5 hours.

Step 5

After 1.5 hours, add the sliced carrots, celery, turnip, bay leaves, and thyme to the pot.

Step 6

Season with salt and black pepper. Continue to simmer for another 1 to 1.5 hours, or until the vegetables are tender and the soup is flavorful.

Step 7

Remove the pork bones and bay leaves from the soup. Optionally, shred any meat from the bones and return the meat to the pot.

Adjust seasoning to taste. Remove from heat and stir in the chopped parsley before serving.
