Ingredients

  • 1.5 pounds mutton, bone-in
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 medium carrots, sliced
  • 1 medium parsnip, sliced
  • 2 celery stalks, chopped
  • 1 medium turnip, diced
  • 2 medium tomatoes, chopped
  • 2 teaspoons fresh thyme
  • 1 teaspoon fresh rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 6 cups beef broth
  • 2 tablespoons chopped parsley, for garnish

Directions

Step 1

Heat the olive oil in a large soup pot over medium-high heat.

Step 2

Add the mutton pieces and brown them on all sides for about 8-10 minutes. Remove the mutton and set aside.

Step 3

In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and sauté for an additional minute until fragrant.

Stir in the carrots, parsnip, celery, turnip, and tomatoes, cooking for about 5 minutes until they start to soften.
