Ingredients

  • 2 tablespoons olive oil
  • 500 grams minced beef
  • 1 large onion, finely chopped
  • 3 units garlic cloves, minced
  • 3 medium carrots, diced
  • 2 units celery stalks, diced
  • 2 medium sweet potato, peeled and cubed
  • 400 grams diced tomatoes
  • 500 milliliters beef broth
  • 2 units bay leaves
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the minced beef and cook until browned, breaking it up with a spoon, about 5 minutes.

Step 3

Remove the beef from the pot and set aside.

Step 4

In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3 minutes.

Add the diced carrots, celery, and sweet potatoes to the pot. Stir occasionally and cook for 5 minutes.
