  • 500 grams Beef liver
  • 2 tablespoons Coconut oil
  • 1 large Onion, diced
  • 3 Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 medium Sweet potato, cubed
  • 200 grams Mushrooms, sliced
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth
  • 1 Bay leaf
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Fresh thyme, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Rinse and pat dry the beef liver. Cut into bite-sized pieces and set aside.

Step 2

In a large pot or Dutch oven, heat 1 tablespoon of coconut oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and sauté for another 1 minute until fragrant.
