  • 4 cups beef broth
  • 14.5 ounces canned diced tomatoes, with juice
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parsley, chopped

Directions

Step 1

Cut the lamb shoulder into 1-inch cubes, trimming off excess fat.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the lamb cubes in batches, browning them on all sides. Remove and set aside.
