Ingredients

  • 600 grams lamb shoulder, boneless
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 3 carrots
  • 2 celery stalks
  • 1 zucchini
  • 1 turnip
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 4 cups beef bone broth
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the lamb shoulder into bite-sized cubes and set aside.

Step 2

Peel and chop the onion and garlic cloves. Peel and slice the carrots, dice the celery, zucchini, and turnip into small pieces.

Step 3

Heat olive oil in a large pot over medium-high heat. Add the lamb cubes and sear until browned on all sides. Remove lamb and set aside.

Step 4

In the same pot, add onions and garlic, cooking for about 2 minutes until fragrant.

Add carrots, celery, zucchini, and turnip to the pot and sauté for 5 minutes, stirring occasionally.

Return the browned lamb to the pot. Add the rosemary, thyme, bay leaf, and pour in the beef bone broth.
