  • 6 cups chicken broth
  • 1 14-ounce can diced tomatoes
  • 1 large bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the chicken thighs and sear until browned on both sides, about 4-5 minutes per side. Remove from the pot and set aside.

In the same pot, add the remaining tablespoon of olive oil. Add diced onion, sliced carrots, and celery. Sauté for 5-7 minutes until the vegetables are tender.
