Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 medium carrots
  • 3 stalks celery stalks
  • 3 cloves garlic cloves
  • 2 medium sweet potatoes
  • 1 medium zucchini
  • 6 cups chicken broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Dice the chicken breasts into bite-sized pieces and set aside.

Step 2

Heat the olive oil in a large pot over medium heat.

Chop the onion, carrots, and celery. Mince the garlic cloves. Add them to the pot and sauté for 5-7 minutes until softened.
