  • 3 chopped celery stalks
  • 1 small, shredded green cabbage
  • 1 medium, diced zucchini
  • 14.5 ounces, canned diced tomatoes
  • 4 cups beef broth
  • 1 pound, grass-fed ground beef
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent.

Step 2

Add minced garlic and cook for another 1 minute until fragrant.
