Ingredients

  • 2 pounds beef chuck roast
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 8 ounces baby bella mushrooms, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium parsnips, peeled and diced
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons parsley, chopped

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes. Season the beef with salt and black pepper.

Step 2

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, browning on all sides. Remove and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil. Add the chopped onion, sliced carrots, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.

Step 4

Stir in the minced garlic and sliced mushrooms, cooking for another 2-3 minutes until fragrant.

Return the beef to the pot. Add the beef broth, tomato paste, thyme sprigs, and bay leaves. Stir well.
