Ingredients

  • 1 pound beef stew meat
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 2 large carrots
  • 2 stalks celery stalks
  • 2 large zucchini
  • 6 cups beef broth
  • 14.5 ounces diced tomatoes
  • 1 leaf bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Dice the onion and mince the garlic cloves. Peel and slice the carrots, and chop the celery stalks.

Step 2

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5 minutes.

Step 3

Remove the beef from the pot and set aside. Add the onion and garlic to the pot, cooking until the onion is translucent, about 3 minutes.

Step 4

Return the beef to the pot. Add the beef broth, diced tomatoes with juice, sliced carrots, chopped celery, bay leaf, thyme, salt, and pepper.

Step 5

Bring to a boil, then reduce the heat to low. Cover and simmer for about 60 minutes or until the beef is tender.

Step 6

Meanwhile, use a spiralizer or vegetable peeler to turn the zucchinis into noodles (zoodles).

Step 7

Once the beef is tender, add the zoodles to the pot and simmer for another 5-7 minutes until just tender.

Step 8

Adjust seasoning with salt and pepper to taste. Remove the bay leaf.

Step 9

Serve hot, garnished with fresh parsley.
