  • 6 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 small, diced zucchini
  • 2 cups cauliflower rice
  • 0.25 cup, chopped parsley

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove and set aside.

In the same pot, add the chopped onion and sauté until translucent, about 4 minutes.
