  • 2 pounds Beef stew meat, cut into 1-inch cubes

  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 3 medium Carrots, peeled and sliced
  • 3 stalks Celery stalks, sliced
  • 1 pound Green beans, trimmed and cut into 1-inch pieces
  • 2 tablespoons Tomato paste
  • 4 cups Beef broth, preferably homemade
  • 2 Bay leaves
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Parsley, chopped

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.

Season the beef cubes with salt and pepper, then add them in batches to the pot, searing until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic and cook for another minute.
