  • 3 minced Garlic cloves
  • 2 medium, sliced Carrot
  • 2 sliced Celery stalk
  • 1 diced Red bell pepper
  • 1 medium, diced Zucchini
  • 2 tablespoons Tomato paste
  • 1 14-ounce can Canned diced tomatoes
  • 2 cups Vegetable broth
  • 1 cup, soaked overnight and drained Dried white beans
  • 1 teaspoon, dried Thyme
  • 1 teaspoon, dried Oregano
  • 1 Bay leaf
  • 0.5 teaspoon Black pepper
  • 1 teaspoon, or to taste Salt
  • 2 cups, fresh Spinach
  • 0.25 cup, chopped fresh Parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 5 minutes until translucent.

Step 3

Stir in the minced garlic and sauté for another 1 minute until fragrant.

Add the sliced carrots, celery, red bell pepper, and zucchini, then sauté for about 5 minutes until the vegetables begin to soften.
