Ingredients

  • 1 cup tapioca flour
  • 1 cup coconut milk
  • 1 large cage-free egg
  • 0.5 teaspoon salt
  • 1 tablespoon coconut oil
  • 2 cups mixed greens
  • 1 medium red bell pepper
  • 0.5 medium cucumber
  • 1 medium avocado
  • 1 tablespoon lemon juice
  • 0.25 teaspoon black pepper

Directions

Step 1

In a mixing bowl, combine almond flour, tapioca flour, coconut milk, egg, and salt. Whisk until smooth to form the wrap batter.

Heat a non-stick skillet over medium heat and brush it with coconut oil.

Pour 1/4 cup of the batter into the skillet and immediately swirl to spread it into a thin circle.
