Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons coconut oil
  • 1 large onion
  • 1 large bell pepper
  • 3 cloves garlic
  • 0.5 pound ground pork sausage
  • 6 large eggs
  • 0.5 cup coconut milk
  • 4 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 stalks green onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and grate them using a box grater or food processor to create hash browns.

Step 3

In a large skillet, heat the coconut oil over medium heat. Add the grated sweet potatoes and cook, stirring occasionally, until they are slightly crispy and beginning to brown, about 10 minutes.

While the sweet potatoes cook, dice the onion and bell pepper. Mince the garlic.
