Preheat your oven to 375°F (190°C).
Peel the sweet potatoes and grate them using a box grater or food processor to create hash browns.
In a large skillet, heat the coconut oil over medium heat. Add the grated sweet potatoes and cook, stirring occasionally, until they are slightly crispy and beginning to brown, about 10 minutes.
While the sweet potatoes cook, dice the onion and bell pepper. Mince the garlic.
Add the onion, bell pepper, and garlic to the skillet with the sweet potatoes. Cook for an additional 5 minutes until the vegetables are softened.
In the same skillet, push the vegetable mixture to one side and add the ground pork sausage to the other side. Cook and crumble the sausage with a spatula until it's fully cooked and no longer pink.
