Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains. You should have about 2 cups of cauliflower rice.
Transfer the cauliflower rice to a clean kitchen towel and squeeze out any excess moisture.
In a large bowl, combine the cauliflower rice, lemon juice, coconut aminos, toasted sesame oil, and sea salt. Mix well to combine.
Peel the carrot and cut it into thin strips (julienne cuts).
Slice the cucumber into thin strips, similar in size to the carrot.
Halve the avocado, remove the pit, and slice the flesh thinly.
Lay a nori sheet on a clean, dry surface with the shiny side facing down and one of the narrow edges closest to you.
Place a handful of the cauliflower rice mixture onto the left side of the nori sheet, spreading it evenly to cover about a quarter of the sheet.
Arrange a few strips of carrot, cucumber, avocado slices, and a couple of pieces of smoked salmon over the cauliflower rice.
Sprinkle a pinch of black sesame seeds on top for added texture and flavor.
Carefully fold the left corner of the nori over the filling, rolling it into a cone shape (similar to an ice cream cone), sealing the edge with a small dab of water if needed.
Serve the hand rolls immediately with a small amount of wasabi paste on the side for those who enjoy an extra kick.
