Ingredients

  • 4 sheets nori seaweed sheets
  • 1 medium cauliflower
  • 1 small cucumber
  • 1 medium carrot
  • 1 medium avocado
  • 8 ounces smoked salmon
  • 1 tablespoon lemon juice
  • 2 tablespoons coconut aminos
  • 1 teaspoon toasted sesame oil
  • 0.5 teaspoon sea salt
  • 2 teaspoons black sesame seeds
  • 0.5 teaspoon wasabi paste

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles rice grains. You should have about 2 cups of cauliflower rice.

Step 2

Transfer the cauliflower rice to a clean kitchen towel and squeeze out any excess moisture.

Step 3

In a large bowl, combine the cauliflower rice, lemon juice, coconut aminos, toasted sesame oil, and sea salt. Mix well to combine.

Peel the carrot and cut it into thin strips (julienne cuts).

Slice the cucumber into thin strips, similar in size to the carrot.

Halve the avocado, remove the pit, and slice the flesh thinly.
