Ingredients

  • 1 3-4 lbs whole chicken
  • 8 cups water
  • 4 slices ginger
  • 4 green onions
  • 1 teaspoon sea salt
  • 1 large head cauliflower
  • 2 tablespoons coconut oil
  • 3 minced garlic cloves
  • 1 tablespoon sesame oil
  • 0.5 cup fresh cilantro
  • 1 medium, sliced cucumber

Directions

Step 1

Place the whole chicken in a large pot and add the water, ginger slices, green onions, and sea salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for about 45-60 minutes, until the chicken is fully cooked and tender.

Once cooked, remove the chicken from the pot and let it cool. When cool enough to handle, carve the chicken into serving pieces.
