Ingredients

  • 2 pieces Ripe avocados
  • 2 tablespoons Fresh lime juice
  • 1 medium, diced Tomato
  • 0.25 cup, diced Red onion
  • 0.25 cup, chopped Cilantro
  • 1 small, minced Garlic clove
  • 0.5 teaspoon Salt
  • 1 pound Ground beef or turkey
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 8 pieces Romaine or butter lettuce leaves
  • 1 small, sliced (optional) Fresh jalapeño

Directions

Step 1

Begin by preparing the guacamole. Halve and pit the avocados, then scoop the flesh into a mixing bowl.

Step 2

Mash the avocados with a fork until mostly smooth, leaving a few chunks for texture.

Step 3

Add the lime juice, diced tomato, diced red onion, chopped cilantro, minced garlic, and salt to the bowl. Stir until everything is well combined. Set aside.

Step 4

In a skillet over medium heat, add the olive oil and allow it to warm.

Step 5

Add the ground beef or turkey to the skillet. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Step 6

Once the meat is cooked, add the ground cumin and paprika to the skillet. Stir well to coat the meat evenly with the spices. Cook for another minute to allow the flavors to meld.

Step 7

Remove the skillet from the heat and set aside.

Step 8

To assemble each taco, place a large lettuce leaf on a plate. Fill it with a few spoonfuls of the cooked meat and top with a generous amount of guacamole.

Step 9

If desired, garnish with fresh jalapeño slices for added heat.

Step 10

Repeat the process with the remaining ingredients to make additional tacos. Serve immediately and enjoy your Paleo Guacamole Tacos!
