  • 2 pounds Chicken thighs, skinless and bone-in

  • 3 medium Tomatoes, chopped
  • 4 cups Chicken broth
  • 0.5 teaspoon Cayenne pepper
  • 2 teaspoons Sea salt
  • 0.5 teaspoon Black pepper
  • 3 cups Spinach leaves, chopped
  • 1 Lime, juiced

Directions

Step 1

Begin by roasting the raw peanuts. Preheat your oven to 350°F (175°C). Spread the peanuts evenly on a baking sheet and roast for 10 minutes, or until they are golden brown and fragrant. Allow them to cool slightly, then grind them into a smooth paste using a food processor.

Step 2

In a large pot, heat the coconut oil over medium-high heat. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent.

Add the minced garlic and grated ginger to the pot, and cook for an additional 2 minutes until fragrant.
