Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1 large, diced onion
  • 3 minced garlic cloves
  • 3 medium, sliced carrots
  • 2 sliced celery stalks
  • 1 large, peeled and diced sweet potato
  • 4 cups beef broth
  • 1 14 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp, chopped parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary and set aside.

Step 3

In the same pot, add the diced onion and sauté for about 5 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add the sliced carrots and celery to the pot and cook for 3-4 minutes until they begin to soften.
