Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Coconut oil
  • 2 tablespoons Coconut aminos
  • 0.5 teaspoon Sea salt
  • 1 tablespoon Sesame seeds
  • 1 tablespoon Chives, finely chopped
  • 2 sheets Nori (seaweed sheets), cut into strips

Directions

Step 1

Break the cauliflower into florets and pulse them in a food processor until it resembles rice grains. Alternatively, use pre-riced cauliflower.

Step 2

In a large skillet, heat 1 tablespoon of coconut oil over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes, or until it is tender but not mushy.

Step 3

Transfer the cooked cauliflower rice to a large bowl. Allow it to cool slightly, then add the sea salt, sesame seeds, and chives. Mix well to combine.

Step 4

Moisten your hands slightly with water to prevent sticking, then scoop about 1/2 cup of the cauliflower mixture and form it into a firm triangular or round rice ball shape. Repeat with the remaining mixture.

Step 5

Heat the remaining tablespoon of coconut oil on a grill pan or skillet over medium heat. Carefully place the rice balls onto the pan.

Step 6

Grill the rice balls for about 2-3 minutes on each side, or until they develop a golden-brown crust.

Step 7

Brush each side of the rice balls with coconut aminos for added flavor and continue to grill for an additional minute on each side.

Step 8

Remove the grilled rice balls from the pan and allow them to cool slightly before wrapping a strip of nori around each one for added flavor and an authentic touch.

Step 9

Serve immediately as a delightful snack or as a distinctive accompaniment to a main dish.
