Ingredients

  • 8 pieces boneless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a large mixing bowl, combine olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, smoked paprika, ground cumin, salt, and black pepper.

Step 2

Add the boneless chicken thighs to the bowl and coat each piece thoroughly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor.

Step 3

Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

Step 4

Remove the chicken thighs from the refrigerator and let them sit at room temperature for about 10 minutes.

Step 5

Place the chicken thighs on the preheated grill and cook for about 4-5 minutes on each side, or until the chicken reaches an internal temperature of 165°F (74°C) and has nice grill marks.

Step 6

Remove from the grill and let the chicken rest for a few minutes before serving.

Step 7

Serve the grilled pargiyot hot, garnished with additional fresh herbs if desired, alongside your favorite Paleo-friendly sides.
