Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground pork
  • 1 large Egg
  • 0.25 cup Almond flour
  • 0.5 cup (finely chopped) Onion
  • 3 cloves, minced Garlic
  • 0.25 cup (chopped) Fresh parsley
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Olive oil
  • 8 pieces Wood or metal skewers

Directions

Step 1

Soak wooden skewers in water for 30 minutes, if using wooden ones, to prevent them from burning.

Step 2

In a large bowl, combine ground beef and ground pork. Add the egg, almond flour, finely chopped onion, minced garlic, chopped parsley, oregano, salt, and black pepper. Mix until all ingredients are well incorporated.

Step 3

Add coconut aminos to the meat mixture and mix until just combined. Be careful not to overwork the meat.

Step 4

Divide the mixture into approximately 16 equal portions and shape each portion into a ball.

Step 5

Thread the meatballs onto the skewers, about 2 meatballs per skewer, making sure to pinch them slightly onto the skewer so they stay put.

Preheat your grill to medium-high heat. Lightly brush skewers with olive oil to prevent sticking.
