Ingredients

  • 2 medium pieces chicken breast
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 tablespoons basil pesto
  • 1 cup baby spinach
  • 1 large tomato
  • 0.5 medium red onion

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Slice the sweet potatoes lengthwise into 1/4-inch thick slices to resemble bread slices.

Step 3

Brush the sweet potato slices with 1 tablespoon of olive oil and season with a pinch of sea salt and black pepper.

Grill the sweet potato slices for about 4-5 minutes on each side or until they are tender and have grill marks. Remove from the grill and set aside.
