Ingredients

  • 2 pieces Whole Branzino (cleaned and scaled)
  • 1 large Lemon
  • 4 sprigs Fresh rosemary
  • 6 sprigs Fresh thyme
  • 4 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F or 200°C).

Step 2

Rinse the Branzino fish under cold water and pat dry with paper towels.

Step 3

Cut half of the lemon into thin slices and reserve the other half for juice. Set aside.

Step 4

In a small bowl, combine salt and black pepper.

Step 5

Rub the inside and outside of each Branzino with olive oil, then season generously with the salt and pepper mixture.

Step 6

Stuff the cavity of each Branzino with 2 rosemary sprigs, 3 thyme sprigs, 2 garlic cloves (lightly crushed), and several lemon slices.

Place the Branzino on the hot grill. Close the grill lid and cook for about 6-7 minutes per side, or until the fish is opaque and flakes easily with a fork. Use a fish spatula to turn the fish gently.

Once cooked, remove the fish from the grill and let it rest for a couple of minutes.

Squeeze the reserved lemon juice over the fish just before serving.
