Ingredients

  • 4 whole artichokes
  • 1 large lemon
  • 60 ml olive oil
  • 3 large garlic cloves
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Fill a large pot with water and bring it to a boil. Meanwhile, prepare the artichokes by cutting off the top inch of each artichoke's leaves with a sharp knife and trimming the stems to about 1 inch in length.

Step 2

Cut the large lemon in half. Rub the cut edges of the artichokes with lemon to prevent them from browning. Squeeze the remaining juice into the pot of boiling water.

Step 3

Add the prepared artichokes into the boiling water, reduce heat to a simmer, cover and cook for about 15-20 minutes until the bases can be easily pierced with a fork.

Step 4

While the artichokes are boiling, prepare the marinade by mincing the garlic cloves. In a small bowl, mix together the olive oil, minced garlic, sea salt, and black pepper.

Preheat a grill or grill pan over medium heat.

Once the artichokes are boiled, remove them from the water and let them cool slightly. Slice them in half lengthwise and scoop out the fuzzy choke with a spoon.
