Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.

Step 2

Wash and peel the sweet potatoes. Cut them into thin strips, about 1/4 inch thick, resembling traditional French fries.

Step 3

In a large bowl, combine the sweet potato strips with olive oil, oregano, garlic powder, sea salt, and black pepper. Toss well to ensure the fries are evenly coated with the seasoning.

Step 4

Spread the seasoned sweet potato fries in a single layer on the prepared baking sheet. Ensure there is space between each fry for even cooking.

Step 5

Bake in the preheated oven for 15 minutes. Remove the tray and flip the fries over to promote even browning. Return to the oven and bake for an additional 15 minutes, or until the fries are crispy and golden brown.

Step 6

While the fries are baking, finely chop the fresh parsley and dill.

Step 7

Once the fries are done, remove them from the oven and place them on a serving platter.

Step 8

Sprinkle the chopped parsley and dill over the hot fries. Drizzle with lemon juice for a zesty kick.

Step 9

Serve immediately while hot and crispy, and enjoy your flavorful Paleo Greek Fries!
