Ingredients

  • 500 grams golden potatoes
  • 1 medium onion
  • 2 large eggs
  • 60 grams almond flour
  • 30 grams coconut flour
  • 3 tablespoons coconut oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Peel and grate the golden potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

Finely chop the onion and set aside.

In a large mixing bowl, combine the grated potatoes, chopped onion, eggs, almond flour, coconut flour, garlic powder, onion powder, sea salt, and black pepper. Mix until well combined.

Add the chopped parsley and gently fold it into the mixture.

Heat the coconut oil in a large non-stick skillet over medium heat.

Scoop about 1/4 cup of the potato mixture and shape it into a patty. Place it in the skillet, and gently press down with a spatula to flatten it slightly. Repeat with the remaining mixture, cooking in batches if necessary.
