Ingredients

  • 2 cups Almond flour
  • 1 cup Coconut flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.25 cup, solid Coconut oil
  • 3 large Eggs
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon zest
  • 1 cup Fresh blueberries

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, baking soda, and salt.

Step 3

Cut the solid coconut oil into small pieces and mix it into the dry ingredients using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, beat the eggs, then mix in the honey, vanilla extract, and lemon zest.

Step 5

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
