Ingredients

  • 200 grams raw hazelnuts
  • 100 grams coconut sugar
  • 120 milliliters coconut milk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Spread the raw hazelnuts evenly on a baking sheet and toast in the oven for 10 minutes, or until the skins start to crack and the hazelnuts are golden brown.

Step 3

Remove the hazelnuts from the oven and let them cool slightly before rubbing them with a clean kitchen towel to remove most of the skins.

Step 4

Transfer the hazelnuts to a high-powered blender or food processor. Blend on high until they form a smooth paste, about 3-5 minutes.

Step 5

In a small saucepan over medium heat, combine the coconut sugar, coconut milk, and sea salt.

Step 6

Stir constantly until the sugar dissolves and the mixture begins to simmer.

Step 7

Lower the heat and continue to simmer for about 5 minutes, until the mixture thickens slightly.

Step 8

Remove the saucepan from the heat and stir in the vanilla extract.

Step 9

Add the hazelnut paste to the coconut mixture and stir well to combine.

Step 10

Let the glaze cool to room temperature; it will thicken as it cools.

Step 11

Transfer to a jar or container and keep refrigerated. The glaze will last up to 2 weeks in the refrigerator.
