Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Ginger
  • 2 tablespoons Coconut oil

  • 2 cloves, minced Garlic
  • 1 small, diced Carrot
  • 0.5 cup Green peas
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Cilantro
  • 1 tablespoon Lime juice

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until it resembles rice or couscous.

Peel and grate the ginger finely. Set aside.

In a large skillet, heat the coconut oil over medium heat.
