Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 0.5 cup arrowroot starch
  • 0.5 cup coconut oil
  • 0.25 cup coconut aminos
  • 2 tablespoons rice vinegar
  • 3 tablespoons raw honey
  • 1.5 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 0.5 teaspoon red pepper flakes
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds, optional for garnish

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large bowl, add the arrowroot starch and lightly coat the chicken pieces.

Step 3

Heat the coconut oil in a large skillet over medium-high heat.

Step 4

Once the oil is hot, add the chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.

Step 5

In a separate saucepan, combine the coconut aminos, rice vinegar, raw honey, tomato paste, minced garlic, grated ginger, and red pepper flakes.

Step 6

Heat the saucepan over medium heat, stirring until the sauce is smooth and starts to thicken, about 5 minutes.

Step 7

Return the cooked chicken to the skillet and pour the sauce over the chicken, stirring to coat evenly.

Step 8

Cook for an additional 2-3 minutes until the chicken is thoroughly coated and heated.

Step 9

Serve the chicken garnished with sliced green onions and sesame seeds, if desired.
