Ingredients

  • 2 pounds Russet potatoes
  • 6 whole Garlic cloves
  • 0.25 cup Olive oil
  • 0.5 cup Full-fat coconut milk
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wrap the unpeeled garlic cloves in aluminum foil with a drizzle of olive oil, then place in the oven. Roast for about 20-25 minutes until garlic is soft.

While the garlic is roasting, peel and quarter the russet potatoes.

Step 4

Place the potatoes in a large pot and cover with water. Add a pinch of sea salt and bring to a boil over high heat.

Reduce the heat to a simmer and cook the potatoes for 15-20 minutes until they are fork-tender.
