Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchinis
  • 3 tablespoons ghee or clarified butter
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Using a spiralizer, create zucchini noodles from the 4 medium zucchinis. Set aside.

Step 2

Rinse and pat dry the peeled and deveined shrimp. Sprinkle with a pinch of sea salt and black pepper and set aside.

Step 3

In a large skillet, melt 3 tablespoons of ghee over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 4

Add the shrimp to the skillet and sauté for 3-4 minutes, or until the shrimp turn pink and are cooked through.

Remove the shrimp from the skillet and set aside.
