Ingredients

  • 2 cups almond flour
  • 1 tablespoon coconut flour
  • 1 quarter cup coconut sugar
  • 0.5 cup coconut oil
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 3 cups mixed berries (raspberries, blueberries, blackberries)
  • 2 tablespoons lemon juice
  • 2 tablespoons raw honey
  • 2 tablespoons tapioca starch

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, coconut sugar, and salt.

Step 3

Melt the coconut oil in a microwave-safe bowl or on the stovetop. Add the melted coconut oil and vanilla extract to the flour mixture. Stir until the mixture resembles coarse crumbs.

Step 4

Reserve 1/2 cup of the crumb mixture for the topping. Press the remaining mixture into an even layer at the bottom of the lined baking pan to form the crust.

Bake the crust for 10 minutes, then remove from the oven and let it cool slightly.

In another mixing bowl, combine the mixed berries, lemon juice, raw honey, and tapioca starch. Toss until the berries are evenly coated.
