Ingredients

  • 2 cups coconut yogurt
  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 tablespoons chia seeds
  • 1 cup sliced almonds
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Directions

Step 1

In a medium-sized mixing bowl, combine the coconut yogurt, honey, and vanilla extract. Stir well until all the ingredients are well blended together.

Step 2

Rinse and pat dry the strawberries, blueberries, and raspberries. Slice the strawberries into thin slices.

Step 3

In a large parfait or glass bowl, start assembling the parfait by adding a few tablespoons of the coconut yogurt mixture at the bottom.

Step 4

Layer a portion of the sliced strawberries, blueberries, and raspberries over the yogurt.

Step 5

Sprinkle some chia seeds and sliced almonds on top of the fruit.
