Ingredients

  • 3 medium Tomatoes
  • 0.5 large Red onion
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 1 small Jalapeño
  • 0.5 cup Fresh cilantro
  • 1 large Lime
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by washing all the vegetables thoroughly. This includes the tomatoes, red onion, red bell pepper, cucumber, jalapeño, and cilantro.

Step 2

Dice the tomatoes into small, evenly sized pieces and place them into a large mixing bowl.

Step 3

Finely chop half of a large red onion and add it to the bowl with the tomatoes.

Step 4

Core the red bell pepper, remove the seeds and pith, and dice it into small pieces before adding it to the mix.

Step 5

Peel the cucumber if desired. Cut it in half lengthwise, scoop out the seeds with a spoon, then dice it and add it to the bowl.

Step 6

Remove the stem from the jalapeño, slice it in half, and remove the seeds for less heat if desired. Finely chop the jalapeño and add it to the mixing bowl.

Step 7

Chop the fresh cilantro leaves, measuring out half a cup. Add the cilantro to the salsa mixture.

Step 8

Juice the lime and pour the fresh lime juice over the vegetable mixture.

Step 9

Sprinkle in the sea salt and black pepper. Stir all the ingredients together until well combined.

Step 10

Taste and adjust the seasoning if necessary, adding more lime juice, salt, or pepper to suit your preferences.

Step 11

Cover the salsa and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled and enjoy as a dip with Paleo-friendly chips or as a topping on grilled meats or vegetables.
